Low Fat Banana Bread

Here is the banana bread recipe as it was given to me, and then afterward is the way I really make it.

  • 1/2 cup butter, margarine or crisco
  • 1 1/2 c. sugar
  • 2 eggs
  • 1 c. sour cream
  • 2 mashed bananas
  • 1 tsp. baking soda
  • 2 c. flour
  • 1 tsp vanilla
  • Preheat oven to 350. Cream shortening and sugar; add eggs and mix well. Add sour cream and bananas and vanilla. Stir in soad and flour until mixed- pur into 2 greased bread pans. Bake for 45-60 min. (or until brown on top and no longer gooey in the middle)

    What I really do!

    Use 3 really black and nasty looking bananas

    Use non fat yogourt unstead of sour cream

    Cut shortening down to 1/3 cup (I use crisco- butter is too strong)

    Cut sugar down to 1 cup (could cut down more if really sweet bananas)

    Add vanilla liberally and add about 3 tsp of cinnamon

    This makes it less fat and still really moist- In my oven it take almost exactly 45 min to cook.

    This is a fool proof recipe- I've never had it come out bad. I even used lemon yogurt once because I didn't have anything else.
